Chocolate Brownies
Recepie Ingredients:
• 1 spray low-fat cooking spray
• 175g self raising flour
• 1 pinch salt
• 1 tablespoon drinking chocolate, low fat
• 100g light brown sugar
• 100g polyunsaturated margarine
• 1 tablespoon vinegar, clear, distilled
• 1 teaspoon vanilla essence
Directions:
• Preheat oven to Gas Mark 8/180C/350F. Spray
a 20cm (8 inch) square baking tin with the low-fat
cooking spray.
• Sift the flour, salt and drinking chocolate
into the tin, add the sugar and stir to combine.
• Mark three grooves down the middle of the
tin. Pour the margarine into one, the vinegar into
the second and the vanilla and walnuts, if using
into the third. Then pour 200ml (7 fl oz) water
over and stir really well to make sure there are
no lumps of flour left.
• Bake for 25 minutes, then cool in the tin
for 15 minutes before transferring to a wire rack
allowing to cool further before eating.
Chicken Enchiladas Weight Watchers Style
Recepie Ingredients:
1 package of chicken strips (boneless-skinless)
or 4 boneless skinless chicken breasts
2 cans of rotels
2 cans enchilada sauce (AKA Red Sauce)
1 package (2 cups) low fat or fat free cheese
1 pack of taco seasoning
1 8 oz container of fat free sour cream
1 medium onion
white corn tortillas or (white) fat free flour tortillas
Directions:
Start your chicken in a frying pan, add chopped
onion, 1 can of rotels and HALF the packet of taco
seasoning. In a large mixing bowl add the other
can of rotels, sour cream, 1 cup of cheese, and
the other half of the taco packet. When the chicken
is done, chop it up and mix it all with the other
ingredients in the mixing bowl. If you are using
the flour tortillas all you need to do is spoon
the mixture onto the tortillas and roll, if you
are using the corn, you need to put them in hot
oil (canola) for a couple seconds to make them soft.
Pour both cans of enchilada sauce over the top and
the other cup of cheese. Bake at 350 for about 25
minutes or until the cheese in melted and bubbly.
